Everyone’s Favourite Chocolate Fridge Cake
I don’t usually post recipes. Cooking is not my specialist subject. However, I know that this is a really, really good one. In my experience, it is beloved by men, women and children. It is so easy to rustle up and will make you the most popular person in the room every time. It’s a very sweet treat. Enjoy.
Serves 8-10 people
6tbsp golden syrup
4tbsp cocoa powder
100g raisins (optional)
400g digestive biscuits (crushed, I always use a plastic bag and a rolling pin, but you could use a food mixer)
200g of your favourite milk chocolate
You will need a baking tray, approximately 20 x 25cm, lined with cling film
Melt the butter and syrup in a pan. Remove from the heat and mix in the cocoa powder. Add the raisins (and/or marshmallows or Maltesers). Mix in the crushed biscuits so that they are fully coated in chocolate. Pack the mixture down in the lined baking tray. Melt the milk chocolate in the microwave and pour over the top of the biscuit mixture. Pop it all the fridge overnight before cutting into chunks. Best stored in the fridge.
